Meet The First Vegan “Butcher” In The US

Minneapolis is about to become home to an oxymoronic shop called The Herbivorous Butcher, which aims to be the first vegan butcher shop in America.

Started by siblings Aubry and Kale—yes, Kale—Walch, the butcher shop will sell the “small-batch, locally-sourced, all-natural meat alternatives” that it has become known for since it started selling its “cruelty-free meat and cheese alternatives” at the Minneapolis Farmers Market in June of 2014.

The duo launched a Kickstarter campaign to make the move from the farmer’s market to a brick-and-mortar shop.
